Ground Beef and Black Beans Crock Pot

Tex-Mex ingredients and flavors are combined with the ground meat to produce a versatile filling. Make this recipe in your slow cooker or Instant Pot.

TexMex ground meat can be made in your slow cooker or electric pressure cooker (Instant Pot). Use the ground meat of your choice in this quick & easy recipe.

What Type of Ground Meat To Use

The choice of ground meat is up to you. I used lean ground beef but you can use ground pork, ground turkey, ground chicken…seriously whatever you prefer.  I recommend you brown the meat and drain the grease before adding it to the slow cooker. If you're using a very lean meat then you might not find the need to do this but I find that the end result is too greasy unless you do. Using the Instant Pot makes this step easy since you can do it directly in the pressure cooker. If you're vegan or vegetarian then you can swap out the meat for tofu or just double up on the black beans.

Double Up On the Vegetables

I use two pounds of ground beef yet only one onion, one bell pepper, one can of corn, and one can of black beans. You can absolutely double up any of the ingredients if you want without having to change the cook time. Meaning you can use two bell peppers, two onions, etc. What I used is the ratio that worked for me but you might have a different preference. I also added a small bit of jalapeño.

Diced Tomatoes or Salsa

Diced tomatoes or salsa? I tend to use diced tomatoes but salsa works to. For the salsa, use the salsa of your choice. You can even add more if you want but I wouldn't use more than 20 ounces total. You can even make your own Slow Cooker/Instant Pot Salsa. For the taco seasoning, I encourage you to use my homemade taco seasoning rather than using a store-bought packet:

How To Serve This

This meat can be served in so many different ways. It's great used as a filling for enchiladas, tacos, or burritos. Other suggestions include as a salad topping or in lettuce wraps.  Please note this recipe is not low-carb, paleo, or whole30 because it includes black beans and corn neither of which are compliant.

  • 2 pounds ground meat
  • 15 ounces corn (drained & rinsed)
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces diced tomatoes or salsa
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tbsp taco seasoning (see blog post for homemade blend)
  • 1 tbsp oil
  • 1 cup low-sodium beef broth (for Instant Pot only)
  • 1/4 cup fresh cilantro, optional for garnish

Slow Cooker

Optional but recommended: add oil to a large pan over medium-high heat. Add ground beef to pan and cook a few minutes until meat is browned. Drain excess grease.

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.
  3. Stir & garnish with fresh cilantro.

Instant Pot

  1. Turn on the IP and select Sauté. Once hot add oil, ground beef, bell pepper, & onion and cook a few minutes until meat is browned and vegetables soften. Drain grease if you need to.
  2. Add the remaining ingredients to the IP. Stir to mix well.
  3. Close lid and seal valve. Set high pressure and cook for 9 minutes. Quick release pressure.
  4. Stir & garnish with fresh cilantro.
  • Prep Time: 10 mins
  • Cook Time: 3 hours

I used a  6-quart slow cooker or Instant Pot for this recipe.
